How To Pack Your Lunch In Only 2 Minutes

Hey there, Vic here and I just finished replying to someone’s email where they said they didn’t have time to eat healthy at work.  They were asking me what the best options were for the drive-thru . . .

I can’t condone eating anything from a fast food restaurant.  Maybe, maybe, the black coffee.  But on general principle alone I cannot recommend eating from those places.  Instead, I suggest pre-cooking your protein source and pre-cutting your vegetables.  That makes packing your lunch a snap.  A 2 minute and 6 second snap to be exact.  Check it out:

    Boredom often ends up in rebellion. I have some questions:
    1) How do you vary this for each day so you don’t look at your lunch and go “oh no, not this again!”
    2) How often do you cook up the meat & keep it so it’s still safe to eat?
    3) What’s in the dressing?
    4) What would you recommend for non meat days?

    1) Personally, I don’t vary much from day to day. Especially during the same week. Boredom may lead to rebellion but options can lead to poor choices. That being said, Jane has listed some excellent options in her comment.
    2) I usually cook on Sunday and will eat it as late as Friday. I know this makes some people nervous, so perhaps use a twice weekly cooking routine such as Sunday and Wednesday.
    3) The dressing is 2 parts extra virgin olive oil, 1 part balsamic vinegar, 1 part soy sauce, with ginger and garlic added.
    4) I typically don’t recommend non-meat days (unless you are a vegetarian). But if you feel that you must go a day without meat, then I would not change anything else – still lots of vegetables and some fruit and nuts.

    There are so many things you could eat for lunch, say, just take a hard boiled egg or 2 you can peel them later, take some salt in a bit of foil. You can take any kind of vegetable or fruit or salad. A good one is lettuce, cucumber, tomato (cut that up just before you eat it, take a whole one or lots of little ones), then a pot of feta cheese and olives just tipped in the top makes it really tasty. I would say you can cook up chicken and keep it in the fridge for about 3 days. I don’t eat dressings except with the feta there is oil in it. Lemon juice is good instead of dressing. You could take a bit of cooked salmon wrapped in foil and put lemon and salt on it and have it with salad. Or some bits of raw veg like cauliflower florets or peas in shells. Or walnuts and seeds with salad.

    I always cook double at dinner,such as chicken breast and veggies.and eat one serving for dinner and take the other serving for lunch.Since I cook different dinners each night my lunches are varied and healthy.

    this is practically what i take for lunch every day. i should pre cut my veggies, as it may take me 5 mins. to get everything ready. but still shorter and healthier than fast food. i also take nuts, fruit, maybe some cottage cheese. i make a vinaigrette similar to yours.

    i don’t like to feel better than everyone else, but when i see what i eat compared to the bags from the fast food place, or microwaved preservative heavy meals, i feel great about myself, my health, and my future.

    Just back from two weeks in Croatia. Pleased to say I didnt put any weight on whilst away. Didnt rent a car this year, decided to walk instead. Went to the market for fresh fruit and vegetables and had plenty of time to prepare my food.

    Looking forward to going to work on Monday and having people say to me “Steve you look great!” looks like you have lost even more weight !!!

    Treat yourself to what ever you want! The price of the cruise includes food, so indulge your self for a week and when you get home get back to the healthy life style you have created for yourself.

    It’s what you do for the majority of time that will give you the results you want. Short term “falling of the wagon” will not hurt you.

    I have one day each week that I will eat what every I want. It’s an incentive to be good the rest of the week

    My coworkers always make comments about my healthy food, but it takes more than two minutes for me to pack my lunch and snacks.
    I cooked always the night before so i do not have to rush in the morning. just saying.

    Like Vic, this is virtually my daily workweek lunch. I spend even less time, by prepping salads twice a week, Sunday (tupperware up 3 salads) and Wednesday (two salads). Also, I mix up a bottle of my vinaigrette as needed, and keep it at the office.

    My lunch is pretty similar – I cook my protein on Sunday and a veggie dish like cauliflower/eggplant dish. That on a bed of romaine or spinach and I’m good to go. I sometimes make tabouli/quinoa which is very filling. Sometimes a fruit (in season) for desert. It’s kinda boring and simple but that keeps me away from the crappy food sold in restaurants and delis around work.

    I have no problem with the food. I vary the lunches with Salmon, Tuna, meat and chicken breast. My problem is alcohol. However, after losing it over the last 3 weekends, I managed to stay off it this last weekend.
