Recipe: One Hearty And Healthy Stew For The Fall


I love fall, it is definitely my favorite season.  And when there is a chill in the air, nothing tastes better than a hearty beef stew.  Just be sure to skip the potatoes and crackers.

Ingredients:

2 lbs. of stew meat (grass fed beef ideally) cut into chunks

1 yellow onion

6 carrots

6 stalks of celery

4 cloves of garlic (more or less depending on your personal preference)

1 small can of tomato paste

1/2 can of chicken or beef broth

2 tsp basil

2 tsp oregano

Chop up all of the vegetables and garlic and don’t get too pretty about it – stew is supposed to be chunky!  Toss all of the ingredients in a crock pot, mix it up, and then cook all day long (at least 6 hours) on low.  Very easy and very delicious.

    Hey Vic,

    Without either a starchy vegetable or flour to thicken the gravy, isn’t it kind of soupy? Would tapioca starch be an allowable thickener for not only the stew, but stir fiies too? Suggestions for additional vegetables would include something green for a little colour. A few frozen peas would probably not fit, given our weight loss goals, but maybe fresh green beans or baby brussell sprouts. Something that will turn a nice bright green when added at the end of the slow cooker time and cooked just till done. Other root vegetables won’t add more colour at all, but rutabega, turnip, or parsnips all have very distinctive flavours to add some variety or just for a change. Happy slow cookin everyone!

    I have never used any thickener in my stews. The gentle vegetable cooking, particularly root veg does the trick. Lots of fresh herbs are great!

    Where do you get coconut flour from – I have never seen it in England?

    It will be kind of soupy, and not as thick as some stews, but it doesnt hurt the flavor one bit!

    @ Kate thanks for the suggestions, thats a good idea. You can get coconut flour at any health food store such as Trader Joe’s or Whole Foods.
